Chicken fatayer are the ultimate Lebanese baked hand pies that can be stuffed with a variety of different fillings. They are a very popular appetizer and also one of the most healthy foods from the Arabic and Meditarenian cuisine. These savory fried pies are often served with yogurt dipping sauce, hummus or Lebanese baba gannouj. They can be eaten on their own or with a plate of other Lebanese dishes like grilled chicken shawarma, grilled kafta, baba ghanouj and even Lebanese salad. To make these savory fried pies you will need the following ingredients:
First, prepare the dough. In a large bowl combine the flour and salt, then add the beaten yoghurt and soft butter. Mix well and knead the dough for several minutes. This process will give the dough a smooth texture. Then cover it and set aside for 1 hour until it doubles in size.
In the meantime, prepare the fillings. To do this, heat the ghee (butter) in a skillet and sauté the onion until it is translucent. Then add the garlic and sauté for a few more minutes. After that, add the cooked chicken and season with salt and pepper.
To assemble the pies, place a tablespoon of the chicken mixture in the center of each flat dough circle. Make sure that the filling does not touch the edges of the circle, as it can cause juice to leak and keep the pastry from staying closed. Gather all three points of the circle up over the filling and pinch firmly to form a triangle. Repeat with the remaining dough circles and filling.
